Seattle’s Luxury Hotel 1000 Announces New Executive Chef

Seattle luxury leader Hotel 1000 has announced the addition of executive chef Peter Birk to oversee the BOKA RESTAURANT + BAR.

Birk has 31 years of professional culinary experience beginning at family owned Spring River Inn in Kansas where in just 12 years he assumed the role of co-owner.

Honing his skills throughout the Pacific Northwest, Birk brings a wealth of experience both in a kitchen leadership position and as a menu developer.

“Our new BOKA menus will showcase Peter’s vision for the restaurant and will continue to incorporate Northwest product. I know Peter will become a strong leader in the kitchen as well as in the hotel to ensure our ongoing goal to make every guest experience exceptional,” said Denny Fitzpatrick, general manager of Hotel 1000.

Birk has extensively traveled studying cooking techniques and has experience leading kitchens in Los Angeles, El Segundo, and in Kansas City.

“We strive to create, through food, beverage and service, and unforgettable experience in a beautifully designed, cozy and comfortable atmosphere,” said Birk about his new role.

A graduate of the Western Culinary Institute in Portland, he spends his free time volunteering for charitable events for the South Seattle Community College and the March of Dimes among other causes.
