Mario Del Pero and Ellen Chen of the popular Mendocino Farms sandwich shops (led by chef-partner Judy Han) plan to open their new Blue Cow Kitchen restaurant February 1. The Blue Cow Kitchen will take the place of the former Casa space downtown, also owned by Del Pero and Chen. With the opening of Blue Cow, the two owners strive to take sandwiches to the next level.
“With Blue Cow, we are creating a place to test our most progressive sandwich ideas.” Del Pero said.
The restaurant will often invite a rotating variety of chefs to explore their own sandwich creations. Chef Jason Travi of Fraiche will be first up, whose creations will be included on the Blue Cow Kitchen’s opening menu.
