Sexy, seductive and modern, the Venetian’s new cocktail lounge The Dorsey brings innovative craft cocktails in a cozy and sophisticated setting right off the casino floor at the resort. The lounge takes over the former Bourbon Room space, filling 4,500-square-foot space features a room decked out in French oak, brass, leather and marble, including a private library with its own fireplace, a rarity in Las Vegas. Digital art from artists such as Marilyn Minter, Poyen Wang and Jason Salavon is displayed on eight screens, a modern touch for the space.

Barman Sam Ross, famous for his concoctions at New York City’s Attaboy, created the cocktail menu here that includes shareable punch bowls as well as a list of drinks that includes one that the New York Times dubbed one of the 11 essential drinks of the “modern cocktail revival.”

And drink the Penicillin in moderation, because much like its name, it will cure all the ails you quickly. The drinks mixes scotch, fresh lemon, ginger and honey with an Islay float on top.

Other divine cocktails here include Let’s Elope with gin, fresh melon, lime and orgea; the East Side Rickey  with vodka, cucumber, mint, lime and club soda; A La Louisiane with rye, Benedictine, Italian vermouth, absinthe and bitters; the Coney Island Express with rum, cold brew coffee, vanilla and Amaro Ciociaro; as well as the Creole Punch, meant for sharing, with rum, pineapple, ginger, citrus, allspice and nutmeg.

If you must divert from the cocktail menu, The Dorsey also features a full-service bar with a collection of spirits, beer and wine.
