The scene of her recent engagement to Travis Barker saw Kourtney Kardashian looking happy, healthy and radiant as ever. Even after three kids and a whirlwind of romantic relationships following her split from longtime beau Scott Disick, the 42-year-old reality TV star sought a life of wellness and prosperity, which ultimately led to finding true love once more.

Of course, Kardashian has always taken care of herself with her mostly vegan diet that balances keto and intermittent fasting. According to Poosh, switching to a plant-based diet helped her live a healthier lifestyle and lessen the environmental impacts caused by eating meat, which she remains passionate about. The initial adjustment wasn’t easy for Kardashian, but gradually replacing meat with plant-based options — though she would sneak a baked crab handroll onto her dinner plate during the first few weeks — eased her toward a mostly vegan diet, which she has enjoyed for the past six to seven months. That said, here’s what Kourt typically eats in a day from breakfast and lunch to dining in or eating out.
In the Morning
Given her several morning options, it appears Kardashian poses as a breakfast enthusiast. If she’s whipping out the blender, her signature avocado shake or banana smoothie — subbed with vegan protein powders — will ensue. Otherwise, she may blend up her own acai bowl or enjoy one from a local spot. For a more filling breakfast, Kardashian may opt for her “famous gluten-free and vegan” cinnamon toast or a blueberry bagel smothered with peanut butter and jelly. In the case she’s enjoying a treat day, Kardashian savors vegan chicken and waffles from Crossroads, and the recipe can be found in their cookbook.

Midday Snacks
Keeping it light and simple, Kardashian typically snacks on one of two options: pickles and tangerines (if you know, you know) or Mindright bars (psst, the peanut flavor is her favorite). But if those two choices don’t suit your appetite, Poosh also provided a full vegan snack list.
An Appetite For Lunch
If she’s in a veggie mood, Kardashian will probably eat a nice plate of zoodles — pictured below thanks to kardashianskitchen, a fan account keeping up with the Kardashians’ eating habits — minus the turkey bacon. However, she also appreciates her bread (if you know what we mean) and may enjoy a piece of sourdough with vegan butter and topped with pickles, plus a side of tangerines.

Time To Dine, It’s Dinner Time
Residing in Los Angeles gives Kardashian the opportunity to dine at an array of incredible restaurants, such as Nobu. At this upscale eatery, she likes to order crispy rice with avocado, edamame and an avocado roll. However, it appears she also sometimes likes to move her sushi night to her home. If not, it’s younger sister Kim Kardashian’s plant-based tacos for the win.
