Prince Street Hospitality Heads Out East This Summer

The East End has a new dinner reservation worth making. This summer, Prince Street Hospitality opened ALBA Spiaggia at Montauk Yacht Club’s Ocean Club—a coastal-inspired extension of New York’s beloved Cucina Alba and Los Angeles’ ALBA that brings the hospitality group’s signature Holiday Italian concept to one of the Hamptons’ most coveted waterfront addresses.

The term Holiday Italian was coined by Prince Street Hospitality founders Cobi Levy and Will Makris, and it captures exactly what they’ve built here: the warmth of the Italian way of life, the allure of its style, and the timeless ease of a long lunch or late dinner by the water. At ALBA Spiaggia, cosmopolitan style meets coastal breeziness in a dining room that seats up to 80 guests and pulls design inspiration from the Italian coast—al fresco materiality, artful touches from Makris and Levy’s personal art collection, and a waterfront setting that encourages guests to stay longer than they planned.

Executive Chef Adam Leonti leads the kitchen, bringing with him decades of cooking and studying across Italy and the culinary philosophy that has made Cucina Alba one of New York’s most talked-about Italian restaurants since its 2022 opening. Guests move through the menu in a traditional arch—a relaxed multi-course structure that feels as though it was designed for a long afternoon in Sicily rather than a Tuesday night in Montauk. The program spans crudos, vibrant salads, grilled fish, house-made pastas, and a wood-fired pizza program, all served with the kind of seaside hospitality that makes the meal feel unhurried.

The signatures are already worth knowing. Chicken Alla Diavolva with bomba sauce, Shrimp Trapanese Pesto with Marcona almonds, and a tableside Orrechiette Arrabiata anchor the menu alongside new seasonal additions—Zucchini Fritti with lemon aioli, Burrata with local honey and basil, Summer Corn with hazelnuts and fennel, Lobster Fettuccine with confit tomatoes, and Branzino Alla Greca among them. The Tagliata con Frits—a marinated skirt steak with handcut fries—rounds out a menu that balances indulgence with restraint in exactly the right proportion.

Debuting at ALBA Spiaggia is Leonti’s pizza program, a two-year passion project from the chef who previously wrote Flour Lab. The sourdough crust—light, firm, charred, and chewy—is his version of a classic Neapolitan, produced in limited quantities each evening. A Margherita with confit tomatoes and basil sits alongside a Quattro Formaggi enhanced by truffle and mushrooms. Both are worth arriving early for.

The bar program moves with the same rhythm as the menu. Classic aperitivos, spritzes, martinis, and negronis — made to complement each course as it arrives — are joined by non-alcoholic libations crafted with all-natural, long-macerated fermented fruit syrups. The Milano Splash with Campari, basil, and blood orange; the Albicocca with gin and apricot; and the Water Will with tequila blanco and grapefruit are among the standouts.
