The experience begins long before the first course arrives. As we were seated, we were introduced to the restaurant’s philosophy through a beautifully presented concept menu explaining Kyoto’s identity as Japan’s “Water Capital.” Surrounded by rivers, mountains, and pure underground water, Kyoto has developed one of the most refined culinary cultures in the country-and TOKI embraces this heritage in a fascinating way.

Chef Tetsuya Asano, who studied and lived in Paris, combines the heart of French cuisine-the richness of sauces and fond-with Kyoto’s delicate dashi traditions. The result is a completely unique culinary language that feels both elegant and deeply rooted in Japanese culture.

The atmosphere inside TOKI perfectly reflects this philosophy. Warm wood interiors, soft lighting, and a calm, intimate setting create a sense of quiet luxury. Sitting at the teppan counter allows guests to fully witness the artistry behind every course. Every movement by the chefs feels graceful and intentional, transforming dinner into a beautiful performance.

What made the evening especially memorable was how unexpected many of the flavors were. The tasting menu celebrated seasonal and locally sourced ingredients from across Japan, creating dishes that felt surprising, refined, and emotional all at once.

One of the most unforgettable discoveries for me was sake lees-a flavor I had never truly experienced before dining at TOKI. Introduced throughout the menu in beautifully creative ways, it added depth, richness, and an almost comforting umami character to several dishes. I completely fell in love with its taste.

The restaurant even presented a small tasting experience centered around sake lees, allowing us to understand its complexity and cultural significance. It felt incredibly thoughtful and immersive, not just a dinner, but an education in Japanese flavor and craftsmanship.

Each course told its own story. Delicate salmon roe, red sea bream paired with Kyoto peppers, duck with aubergine, ancient rice, and beautifully seasonal vegetables all arrived like pieces of art. The menu flowed effortlessly, balancing richness and freshness with extraordinary precision.

What stood out most was the emotion behind the experience. TOKI does not try to overwhelm with extravagance. Instead, it creates intimacy, subtlety, and harmony-qualities that feel deeply Japanese. Every detail, from the plating to the pacing of the courses, encourages guests to slow down and truly appreciate the moment.

The service was equally exceptional. Warm, graceful, and attentive without ever feeling intrusive, the staff made the entire evening feel personal and welcoming. Their passion for the cuisine and their knowledge of each ingredient added another layer to the experience.

Dining at TOKI felt less like visiting a restaurant and more like being invited into a carefully curated world where food, culture, seasonality, and emotion exist in perfect balance.
