Bar210 and Plush Open at the Beverly Hilton Hotel

Like the USA network, you have always felt that characters are welcome.  Whether they’re in your family, designing your clothes, or behind the bar serving your drinks, strong personalities always keep things that much more interesting.  Top Chef alum Marcel Vigneron, for example, should be cast as the next character invited into your inner sanctum. By inner sanctum, we mean your list of chefs you’ll allow to cook for you around Los Angeles.

While we were sad to see the iconic tiki room that was Trader Vic’s go, coconut shell cocktail glasses and all, it seems the Beverly Hilton has gotten smart with what to do with their space.  Introducing Bar210 and Plush, two lounge/restaurant/nightclubs that have employed Vigneron to helm the kitchen.  Eater LA reports that Vigneron (who was known best on the show for molecular gastronomy tricks constantly up his sleeve) was hired last Wednesday and that he describes the menu as “modern global tastings.”

Not sure what that exactly means? Think Tiger Prawn Ravioli, Pork Belly Sliders, and Mushroom Tarts, according to Marcel who spoke to Eater LA’s editor Kat Odell.

The Weinstein Company held their Golden Globes after-party at Bar210, which was, supposedly, a big hit.

This will be the only place in Beverly Hills open past the area’s resident’s collective bedtimes of 9pm – aside from Nic’s Martini Lounge.  Will this start a trend in Beverly Hills to stay up a little later and get those dancing shoes on?
