Save the Date: Four Seasons Maui Presents Dinner and Wine Under a Night Sky

There’s nothing that complements a lavish dinner better than a premium vintage…Unless the dinner and wine pairing takes place at the upscale Four Seasons Resort Maui at Wailea’s oceanfront lawn.

On May 6 the luxury resort, nestled on 15 oceanfront acres in prime Wailea, is hosting a viticulture evening featuring the creative cuisine of Four Seasons Master Executive Chef Roger Stettler and the wines of Opus One Winery, considered America’s first ultra-premium wine.

Located in Oakville, Calif., Opus One Winery was founded as a joint venture between Baron Philippe de Rothschild of Château Mouton Rothschild and Robert Mondavi to create a single Bordeaux style blend based upon Napa Valley Cabernet Sauvignon.

“The men first met while in Hawaii and later launched the renowned vineyard so it is quite fitting that their select vintages come back to us to be enjoyed by guests at Four Seasons Resort Maui for this special occasion,” says Thomas Steinhauer, regional vice president and general manager, Four Seasons Resorts Maui.

Winemaker Michael Silacci, who is responsible for viticulture and winemaking, has selected five Opus One vintages to feature at the exclusive dinner in Wailea including a 1981 vintage from one of the earliest harvests in Napa Valley history and one of Silacci’s first vintages at Opus One from 2001. (He will be attendance that night, too.)

The menu isn’t too shabby, either; Stettler has prepared a decadent four-course meal boasting items such as Hudson Valley foie gras, Maine lobster, braised oxtail with sun choke mousse and crackling kurobuta pork belly. And yes, there will be desserts.
