A Nobu-style gilda on a toothpick, a toro croqueta and a martini sipped beside a former bank vault: Nobu has arrived in Madrid, and it’s speaking fluent Spanish. Madrid’s first outpost of chef Nobu Matsuhisa’s celebrated restaurant opened September 1, 2026, inside the 50-room Nobu Hotel Madrid on Calle Alcalá in Las Cortes, serving Black Cod Miso and Yellowtail Jalapeño alongside Canarian sea bass and Mediterranean tuna, with a vault-walled martini bar below and a seventh-floor rooftop above.

Some openings simply add an address. This one gives the whole city something new to talk about.

There’s plenty here for the Nobu loyalist to recognize. But the real story is what Madrid brings to the relationship: Spanish seafood, a wine list that champions local producers and bars serving Japanese takes on Spanish classics. The hotel provides the backdrop; the restaurant is the reason to book.

A Dining Room With a Sense of Occasion

Designed by GRONDA, the dining room pairs bronze-toned ceilings with dark stone floors and timber paneling, softened by earthy upholstery, while floor-to-ceiling windows connect the room to the streets outside. It’s warm and intimate enough for a long dinner, polished enough to make dressing up worthwhile.

Downstairs, the cocktail bar gives the night a second act. The building was once a bank, and its original vault walls and safety deposit boxes have been woven into the bathrooms, a wonderfully unexpected piece of history.

A high-fidelity vinyl DJ system anchors the room, with live DJs from Wednesday through Saturday, and the menu focuses on martini-style drinks. The food is where Nobu and Spain really meet: Nobu Style Gildas and Blue Cheese Croquetas with Toro, the latter putting a quintessential Nobu ingredient into the most Spanish of formats.

Or begin on the seventh-floor rooftop, where panoramic views of Madrid come with aperitivo-style cocktails: spritzes, light highballs and seasonal drinks, at a gentler pace than the martinis downstairs.

The sharing menu leans playful: Sea Bass and Coconut Ceviche, Quisquilla Shrimp with Shiso Salsa, Tortilla with Dry Miso and a Salmon Bikini with Caviar, the tortilla and bikini translating Spanish staples through Japanese ingredients and a luxurious finishing touch.

Rooftop aperitivo, dinner built around the signatures and Spanish seafood, a final martini in the vault: it’s the perfect itinerary for the capital’s first Nobu. The reservation may begin with a familiar name. The reason to explore the menu is Madrid.
