What actually unfolds in that glass is meant to be lived, not spoiled in advance, but the philosophy behind why it was built this way is worth understanding before you ever pour a drop.

Le Grollet, the small village in Grande Champagne that holds the house’s birthplace cellar, is where old tiercons, some of the oldest casks in the collection, hold the final blend as it rests. A small number of privileged clients have tasted directly from the cask there. Cellar Master Baptiste Loiseau built Black Pearl to give everyone else that same feeling, wherever they happen to be.
“In that place, the atmosphere, the humidity, the temperature, is really giving the liquid an aspect, a rhythm, an authenticity that is really special,” Loiseau said. “That makes this moment truly singular in comparison to a classical moment of tasting.” The entire point of Black Pearl, he explained, was making that specific feeling travel, “not only in Le Grollet, but for all our LOUIS XIII lovers and clients all over the world.”
What makes Black Pearl genuinely different is that the tasting itself was designed as the product, not an afterthought to it. The liquid begins its journey resting in a custom-built cooling cellar, well below room temperature, and is meant to be tasted as it gradually warms over time rather than evaluated in a single pour. Loiseau was careful to describe the arc in terms of feeling rather than a fixed checklist of notes. “It’s really something that is gaining lightness through the evolution,” he said, “because of this blend and the cooler temperature working together. It’s really something that will help people see the complexity of the blend, and the fact that it’s gaining a much wider range of aromas through the tasting moment.”
He was equally clear that the experience resists being flattened into a single description. “It’s really the paradox in LOUIS XIII,” he said. “Even as it gains much more lightness through the tasting moment, it keeps this concentration and a finish that is really long.” The specific shape of that transformation, he suggested, is something meant to be discovered glass in hand, not read about beforehand.

I asked directly how much thought goes into curating an actual experience, not just a liquid, when building a blend, Loiseau didn’t separate the two. Black Pearl marks the first time in his tenure, and in the house’s history, that a release paired a newly created blend with a tasting ritual designed specifically to match it. “It’s the very first time, for me as Cellar Master, that we are coming with a proposal that’s not only about the blend but also about the tasting ritual itself,” he said.
That meant the ritual had to be built around real physical parameters, not just atmosphere. “For the ritual to match the experience in terms of parameters, it was really my decision to say, okay, it has to be a specific blend,” Loiseau explained. “You can have the experience of the classical blend at a cooler temperature, but the sensation won’t be the same.” Finding the one eau-de-vie that could give the blend its twist, he said, meant returning to the oldest holdings in the house’s cellars and identifying the single component that could recreate what he remembered from tasting directly from the tiercon.
There’s a genuine puzzle at the center of Black Pearl, and I put it to Loiseau directly: how do you take a sensory experience this specifically tied to one physical cellar, its ethereal humidity, its enveloping half-light in winter, and make it something a guest anywhere in the world can actually feel?
“That was the biggest challenge,” Loiseau said. “It wasn’t only about serving the classical blend at a lower temperature. If you do that with the classical one, you don’t get this kind of sensation.” The real solution, he explained, lived in memory rather than temperature alone. “This ritual had to be replicated thanks to the memory I have in my mind of the sensation, all these aromas coming through the tasting moment from the tiercon in winter.” He compared the process directly to perfumery: “It’s like a perfumer who has an idea of a sensation, a place that’s moved them, maybe by the sea, or at sunset, and tries to replicate that emotion and sensation through the creation of a perfume. It was the creation of a twist in the final blend to replicate this sensation and create Black Pearl.”

When asked what he wants clients to walk away with, not what they tasted, but what they felt, Loiseau landed on two ideas: terroir and time. “For me, it’s this small place, this small cellar, the darkness, that you come and make travel all over the world,” he said. “It’s the understanding that the only place in the world where LOUIS XIII can be made is where I’m based, where I live, where I have my whole team and the expertise of all the makers.”
The second feeling, he said, is patience itself. “It takes time in the making of LOUIS XIII, and here you have a tasting that will be even more relaxing in terms of timing, because it’s all this evolution of aromas through the lower temperature to the room temperature that will help people understand the complexity in the making of LOUIS XIII. You have to take your time and appreciate it drop by drop through the evolution of aromas.”
None of this experience would be possible, Loiseau noted, without the sensory discipline required to select the eau-de-vie in the first place. He described the tasting team’s preparation in explicitly athletic terms: no coffee, no cigarettes, no perfume, no spicy or strong food before a session that matters for the house. “We have to be sure the way we judge the eau-de-vie pays tribute to what’s been done by the growers,” he said, “because we won’t be the ones to see the final step for this eau-de-vie. It will be something we transmit to the next cellar master.”
The release will be available by the glass at a selection of destinations around the world, including Paris, London, New York, Shanghai, and Kuala Lumpur, giving guests outside the private client network a chance to experience the ritual firsthand. Decanters themselves carry an SRP of $28,000 and are available through the LOUIS XIII network of private client directors. Ludovic du Plessis, Director of Rémy Cointreau’s Prestige Division, framed the release as a genuine first for the house: “For the first time, we brought the experience of the Cellar beyond its walls, with this singular blend and its exclusive temperature-driven ritual. Black Pearl offers a tasting journey unlike any other in the world of LOUIS XIII.”
