At Level 6, the traditional omakase format is reimagined through a Spanish lens, introducing a 10-course, gastronomically driven experience that feels both unexpected and unmistakably refined. And to perfectly complement each course, a bespoke Spanish wine pairing is available, alongside Level 6’s signature cocktails.

The concept comes from INK Entertainment, the Toronto-based hospitality group behind some of North America’s most ambitious dining and nightlife destinations. Known for transforming spaces into full sensory experiences, INK brought that same vision to Miami with Level 6. The venue echoes INK’s ethos, as it’s a stunning rooftop space perched above the Biscayne Bay waterfront, quickly establishing itself as one of the city’s most striking dining destinations.

INK’s Executive Chef Patrick Ochs and Corporate Executive Sous Chef Abel Veulens conceived an experience that unfolds at an intimate counter high above the water — a curated progression of bites, each one revealed with precision, intention, and a sense of culinary theater.

The journey begins with a playful, one-bite “Liquid Olive” that bursts with flavor, setting the tone for what follows: a balance of bold Spanish influence and delicate, modern technique. From there, the menu moves fluidly — cool to warm, light to indulgent — touching on seafood, rich flavors, and traditional Spanish ingredients through an innovative lens. There’s a rhythm to it. Textures shift, flavors build, and just when you think you’ve settled into one direction, the next course pivots.
