Have Dinner With Roberto Cavalli’s Son at a Four Course Wine Pairing

Want to have dinner with Tommaso Cavalli? Well you can! At Roberto Cavalli’s first U.S culinary and nightlife destination, Cavalli Miami Restaurant & Lounge. Mr. Cavalli has brought the best of Italy’s food, fashion and design to Miami. Paying homage to Cavalli’s Italian roots and keeping it in the family, Tommaso Cavalli, son of the couturier, proudly presents an evening of fine dining and wines from the Cavalli family’s vineyard Tenuta degli Dei. The four-course dinner on Friday, March 21, will feature Tuscan culinary delights by Executive Chef Stefano Mazzi with paired wines selected by Tommaso and sommelier Matias Benjamin Vergara.

That evening, guests are promised an authentic Italian cuisine beginning with a choice of burrata; beef tartare chianina; or roasted beets salad, all perfectly paired with a glass of Le Redini 2010. Tommaso, who has lived on the family vineyard since 1989, will speak of his experiences of transforming Tenuta degli Dei into a first rate working farm and discovering a love of winemaking in the process. Primi options include wild boar ravioli; chestnut pappardelle with veal ragu; or gnocchi with gorgonzola and mountain mushrooms, all paired with Tenuta degli Dei 2007.

Cavalli’s sommelier, Matias Benjamin Vergara, will talk about the rich history of Roberto Cavalli’s wine and grappa grown in an oasis protected by silence and the green hills of the Italian countryside. For the evening’s third course, guests will enjoy Tenuta degli Dei 2009 with a choice of baked herb crusted sea bass; pan roasted chicken; or lamb shank ossobuco, each equally delicious and purposely selected by Chef Mazzi to complement the vino. No Cavalli dinner experience is complete without dessert, and the special evening’s decadent choices are chocolate al gianduia with a reduction of Tenuta degli Dei 2007 or almond semifreddo infused with grappa Tenuta degli Dei, both accompanied by a glass of grappa.
