Monte Carlo Beach Club Appoints New Executive Chef Gavin Gleeson

Located on near the pristine beaches of Saadiyat Island, Monte Carlo Beach Club has appointed Chef Gavin Gleeson to head up its culinary team. Hailing from Ireland, Gleeson has worked at two Michelin starred restaurants in London and Dublin, and most recently as the executive chef at Marco Pierre White’s Wheelers in Dubai. At Monte Carlo Beach Club he will serve cuisine that is line with the venue’s French Riviera spirit.

“The Elsa restaurant in Monaco is one of my biggest inspirations for Le Deck – being one of only a handful of restaurants which is 100 percent organic,” says Gleeson. “I’m very keen to start using more organic produce in the kitchen here at Le Deck. I am also hoping to get our very own Monte-Carlo BeachClub organic garden set up!”

Gleeson’s first act as executive chef at Le Deck was to create a brand new business lunch and revamp Le Deck’s menus, featuring dishes such as chicken parfait with onion marmalade and toasted brioche, saffron risotto or the classic Italian dish Tagliatelle Ragu alla bollognese.

He has also created a new business lunch menu for the winter months. “I wanted to make comforting and filling food – all to fit within a lunch hour,” he says. “The menu changes weekly, and you can mix and match all our dishes in order to have a completely new experience each time you visit. The service is flexible based on guests’ requirements.”
