Planning to ring in the new year with a special meal. The restaurants in Las Vegas has pulled out all the stops with delicious menus, live entertainment and Champagne to boot to help you get 2011 started on the right foot. Take a look at these special menus at 45 restaurants on the Strip put together especially for the big countdown.

American Fish at Aria at CityCenter has two different menus at two different seatings. Celebrity chef André Rochat oversees this AAA Four Diamond Andre’s Restaurant & Lounge at the Monte Carlo menu himself. Chef Mark LoRusso‘s creative steak and seafood cuisine Botero at Encore Las Vegas will be presented in a prix fixe menu comprised of Maine lobster salad with winter citrus and curry vinaigrette; ricotta agnolotti with white truffles and parsnips; phyllo-crusted Dover sole with crab brandade, and filet of beef Rossini with potato cake, spinach and black truffles. The Country Club at Wynn Las Vegas is offering a prix fixe menu from Carlos Guia of celebratory dishes such as Russian and California estate Osetra caviar with potato crisps and smoked salmon; King crab and lobster ceviche; pheasant, foie gras and black truffle pot pie; pan roasted sea bass and shrimp, as well as filet mignon with porcini mushroom crust. CUT by Wolfgang Puck at the Palazzo delivers a unique dining experience in addition to its regular menu. The tasting menu includes scallop and truffle gratin with toasted brioche; Maine lobster “en croûte” with parsnip, sea urchin froth, sea beans; and rabbit (three ways): rack, stuffed saddle, braised leg with carrots and cardamom. The decadent tasting menu ends with artisanal cheese and variations of grapes and Champagne and chocolate. Diego at MGM Grand is hosting the ultimate New Year’s Eve fiesta. Items such as scallops with roasted corn esquites and yellow corn pancakes, crema de langosta con ancho (ancho chile-laced lobster cream soup with yellow corn flan) and beef tenderloin alambre (mesquite-grilled brochettes of red chile-marinated beef tenderloin and seafood chorizo sausage with warm grilled mushroom salsa) can be ordered individually or as a complete tasting menu for $96. “Chef of the century” Joël Robuchon is offering a six-course degustation menu for $295 and a 16-course degustation menu for $435 at his eponymous AAA Five Diamond restaurant at the MGM Grand. Both feature incredible offerings such as le foie gras salad with potatoes and black truffle shavings and le caviar on a fennel cream, but the latter menu not only starts with caviar, but finishes with it, as well, for the ultimate celebratory meal. At Wynn‘s new dining destination Lakeside Grill, chef David Walzog will prepare a prix-fixe menu of imaginative takes on classic American dishes. With a celebration on two levels, rm seafood at Mandalay Bay offers a great New Year’s Eve celebration at a variety of price points. For a casual yet delicious New Year’s dinner, two prix-fixe menus will be offered downstairs including a glass of Champagne (three-course: $85 per person plus $35 for wine pairing, seven-course: $115 per person plus $55 for wine pairing). Chef Martin Heierling has prepared an incredible menu for New Year’s guests at AAA Four Diamond Sensi at the Bellagio, available from Dec. 30 through New Year’s Day.
