What Made Him Haute: His establishments have defined the haute dining scene for over a decade.

What Makes Him Haute Now: Daniel Boulud hosts an annual “game” night each fall at his New York restaurant Daniel.  The entrees served on this special occasion were all wild game animals such as red-legged partridge, Millbrook venison, wild duck and Scottish hare. While the guests feasted on the rich fare a game is played. This year after each of the five courses that were served, a question was asked relating to the dish that was just completed. The guests who answered correctly won coveted prizes such as black truffle butter, a definite motivation to review your wild game knowledge before attending the event.
