Palace Hotel Tokyo Shoots for Constellation of Michelin Stars

The 290-room Palace Hotel Tokyo recently opened in Marunouchi and it features 10 new restaurants and bars including Japanese, Chinese and French dining spots that are vying for Michelin stars.
With so many dining options located in one hotel, it is no wonder that the restaurants are a key talking point for the Palace Hotel Tokyo. Takashi Kobayashi, the company’s president, said, “Our goal with each of these restaurants is not simply to complement our guests’ accommodation experience, but to create several, new dining icons in this city – a constellation of opportunity, if you will.”
The hotel’s original Palace Hotel’s French restaurant, Crown, is located on the property’s sixth floor and is run in collaboration with Patrick Henriroux, who has a two-star reputation at La Pyramide in Vienne, France for more than 10 years. Also located on the sixth floor, Michelin two-star Chef Shinji Kanesaka runs operations at Sushi Kanesaka, while down on the fifth floor, Amber Palace serves Shanghainese and Cantonese cuisine.
“There is only one Tokyo, and there will only be one experience like the Palace Hotel,” said Kobayashi, “From the Aji stones at our entrance to the linens in our guest rooms, from the omotenashi at first encounter to the general management, we’re celebrating an unfiltered appreciation of our country’s culture.”
