After months of buildup and anticipation, hospitality power player David Grutman and Pharrell Williams have debuted their latest collaboration, Swan and Bar Bevy, with Top Chef Europe alum and champion, Executive Chef Jean Imbert.

The two-part restaurant and lounge concept debuted in the heart of the posh Miami Design District, offering the perfect combination of Grutman’s golden touch—bringing his visionary direction in nightlife and hospitality—as well as Pharrell Williams’ signature style and Imbert’s expert culinary skill. Additionally, the power squad added storied interior designer Ken Fulk to the mix to ensure that the finished product was nothing less than extraordinary. And the final product is truly breathtaking.

Paying tribute to its name, Swan boasts a picturesque, elegant décor with a shell pink theme prevalent throughout the space, as well as swan paintings and sculptures highlighting the interior. The focal point of the main dining room is the impressive horseshoe-shaped bar covered in scalloped tile, topped with pewter and boasting a jaw-dropping glowing pink onyx. Delicate white wooden bar stools with plush pink cushions decorate the area, and detailed white and pink cabinetry perfectly contrast against the mirrored bar backsplash.

The fashionable dining rooms feature touches of shell pink, creamy opal and jade green, drawing inspiration from the surrounding Design District, as well as Miami and Palm Beach. Delicate florals pair beautifully on the center of each table, and adorning the walls over the custom banquette seating are works by fashion illustrator David Downton, known for his work with Chanel, Dior, Tiffany and portraits of celebs including Cate Blanchett, Catherine Deneuve, Iman and Linda Evangelista. Each room itself is a work of art and strategically designed for the camera—even its bathroom area, which takes on a green, black and white botanical theme with intricate flooring, pristine white marble and beautiful tasseled chandeliers that make for the perfect photo backdrop.

The cuisine is equally as awe-inspiring as the tasteful décor, with Imbert putting special emphasis on locally and sustainably sourced ingredients and crafting inventive, globally influenced plates. Signature dishes include the Snapper Sashimi with mango, serrano chili and pickled kumquats; Corn Corn Corn—a triple threat with creamy polenta, popcorn and brown butter; the delicious Ratatouille with bell pepper, zucchini, eggplant and tomato; and a melt-in-your-mouth Dover Sole with brown butter, capers and lemon.

As to be expected, the drinks are perfectly crafted to complement the rich, global cuisine with an innovative cocktail menu. Highlights include the refreshing and spicy Kalahari—tequila, watermelon chili, ginger and lime; and the sweet and warm, French-inspired Mon Chéri—cherry-infused Buffalo Trace Bourbon, vanilla, angostura and chocolate bitters.

“Since first meeting David [Grutman], I could tell he was the man to know in hospitality,” Chef Imbert says. “Together with Pharrell, we are creating a culinary adventure.”
And the extravagant journey does not stop there. After dinner, guests will be transported to a sexy, Moroccan-style upstairs cocktail lounge at Bar Bevy. Also designed by Fulk, Bar Bevy takes on a completely different theme with a much darker yet equally detailed interior design. The space features zebra stripes, colorful street art by renowned artists, brass drum finishes and dark floors. At the focal point of the room is a canopied seating area with rich, flowing tapestry fit for bottle service. Next door is the highly Instagrammable “pink room,” which is painted in hot pink and showcases a meticulously curated selection of enviable artwork with hip sofa seating and one-of-a-kind custom tables.

Finally, the outdoor area takes on a magical garden theme designed by landscape architect Raymond Jungles of Soho Beach House. At the entry of the restaurant, guests are greeted by an ethereal fountain by Kobi Karp, setting the scene for a truly memorable experience that cannot be found elsewhere in Miami.
“Swan is hands-down the most beautiful restaurant in Miami,” says Grutman. “From the second you step foot in the restaurant, you are surrounded by feminine tones, amazing décor details and sick artwork. I love the vibe, and I know Miami will, too.”
