Upscale yet not uptight, Anthony’s Prime Steak & Seafood is the signature steakhouse at the architecturally-stunning M Resort Casino Spa. Located at the southern tip of Las Vegas in an up-and-coming area near the future Raider’s Practice Facility and Henderson Executive Airport, the AAA Four-Diamond resort is convenient for those headed in or out of town via jet or on wheels. It’s also worth a trip to the southern end of the Strip to check out the resort’s expansive view, summer poolside concert series, Forbes Four-Star spa, and new 16th-floor venue, 16 – A Handcrafted Experience.

For Happy Hour, Anthony’s bar serves the full steakhouse menu and half-priced appetizers like Lobster Flatbread, Seasonal Oysters, Duck Spring Rolls and Crispy Fried Artichokes. Enjoy cocktails, beer, wine from the resort’s award-winning wine program and must-try spirits like Johnnie Walker Blue Label and veteran rocker Jon Bon Jovi‘s top-rated rosé Hampton Water, created with his son Jesse Bongiovi. Happy Hour is offered at the bar daily from 5 p.m. to 7 p.m.

The same Happy Hour with Anthony’s appetizers is offered every Wednesday through Saturday from 7 p.m. to 8 p.m. at the M’s wine bar Hostile Grape. Located in the wine cellar, the bar offers a selection of 400 wines from around the world, including 1997 Screaming Eagle for $6,900 and 2005 Château Pétrus for $11,000.

Earlier this year, Celebrity Chef Scott Conant opened his sophisticated, yet approachable Italian restaurant Masso Osteria at four-diamond AAA-rated Red Rock Casino, Resort & Spa. Located in the classy Las Vegas suburb of Summerlin, the restaurant has a playful yet refined open design that spies the kitchen, cozy bar and lounge, and outdoor patio seating.

A James Beard Award-winning chef and winner of “Chopped All-Stars” Season 3, Conant described the Masso Osteria opening as “the culmination of my entire career,” telling the press, “We’re creating an environment in which people can be happy, where they can celebrate and spend special times with us.” Also adding to the social atmosphere at Red Rock, Blue Ribbon Sushi Izakayal will join the culinary line up later this year.

Masso Osteria kicked its Social Hour into gear at the start of summer with specials on wine, a San Remo signature cocktail and seasonal beer. The menu also gives guests to sample the evening with light bites like a Chef-selected meat and cheese plate, Oysters, Short Rib bites, a single-serve woodfired Pizza of the Week and Balsamic Glazed Pork Ribs. Social Hour takes place in the bar and lounge nightly from 5 p.m. to 7 p.m.

Harvest by Roy Ellamar serves healthy haute cuisine with an eye on and heart for sustainable living. Located at the AAA Five-Diamond Bellagio Las Vegas, this modern and sleek restaurant replaced Sensi in the Bellagio’s Spa Tower in 2016.

Harvest is helmed by Chef Roy Ellamar whose lifelong ethos for local agriculture and sustainable practices influenced his career in Hawaii Chicago, Los Angeles, and then Las Vegas. Everything down to the cocktail program is seasonally inspired and farm fresh. The restaurant also features a monthly Snack Wagon Pop-Up Series, showcasing some of the city’s finest chefs. September brings Executive Chef Jay Calimlim of Della’s Kitchen at Delano Las Vegas. The guest chef will take the reigns of a signature snack wagon to showcase some of his own small bites during a portable and social meal on wheels.

Harvest Hour in the bar and lounge area features a curated selection of specially-priced Harvest Signature Cocktails, wine and Snack Wagon pop-up items. The happy hour is available from 5 p.m. to 6 p.m. and again from 9 p.m. to 10 p.m. Sunday through Thursday. The next Snack Wagon takeover is from 5 p.m. to 9 p.m. September 7.

The Underground at The Mob Museum

A sophisticated nod to a glamorous era, The Underground at the Mob Museum is a speakeasy-style hangout in the basement at The National Museum of Organized Crime and Law Enforcement in downtown Las Vegas. The Prohibition-era chic atmosphere incorporates 1920s art and artifacts, paying homage to the bootlegging era of America and its ties to the rise and fall of the Mob.

Make your way through the hidden entrance to find a swingin’ bar with house-distilled moonshine and craft beer, as well as wines by the glass and nostalgic cocktails like the gin-based Bees Knees. Put some swing in your step, or knock it right out with the homemade moonshine, a Las Vegas corn whiskey made from propriety vodka and 100 proof corn mash. During Happy Hour, visitors celebrate the Roaring ’20s with 20 percent off select craft cocktails, draft beer and wine by the glass.

Happy Hour runs from 5 p.m. to 7 p.m. Monday through Friday. August features the first Zap on Tap, a craft beer collaboration with signature sponsor Zappos. The first brew is Z’Cream Dream, made in limited-supply by self-professed “beer nerds” from Zappos under the guidance of an on-site brewmaster.

Skyfall Lounge has prime real estate atop the artsy Delano Las Vegas attached to Mandalay Bay. The sleek lounge’s crown jewel is an elevated open-air patio overlooking the bright lights of the Las Vegas Strip and the valley. It’s reached via an elevator to the hotel’s 64th floor, adjacent to acclaimed Chef Alain Ducasse‘s Italian-influenced Rivea.

For the nightly Sunset Hour, the Skyfall bar team collaborated with Ducasse to offer gourmet bites and contemporary cocktails such as the v.o.e. with citrus gin, floral vermouth and Alain Ducasse Champagne, or the the mezcal-inspired cielo rosa. A casino-free hotel with dog-friendly privileges, guests staying in one of the suites have the added perk of a Champagne toast as the sun starts setting and the Strip lights switch on.

Sunset Hour takes place at Skyfall Lounge from 5 p.m. to 7 p.m. daily. The Champagne flows between 7:30 p.m. and 8:30 p.m. If you prefer to keep your feet on the ground, Delano’s seductive lobby lounge Franklin has a curated cocktail program offering rare and premium liquors, craft beers and wines exclusive to Franklin from noon to midnight, Monday through Sunday.
