On Wednesday, August 15 Eataly NYC Flatiron opened Il Pastaio di Eataly, a new fresh pasta bar located on the store’s first floor serving quick, house made fresh pasta dishes inspired by authentic regional Italian cuisine.

Led by Head Pastaio, Luca Donofriopasta served at Il Pastaio will be made from scratch daily by Eataly’s team of in-house pastai, or “pasta makers”. The seasonal menu, curated by chef Donofrio, will feature dishes highlighting housemade pasta from the North to the South, such as agnolotti del plin from Piemonte with veal and sugo and malloreddus from Sardegna with sausage ragu. The bar will also offer over fifty Italian wines as well as a small beer selection to complement each dish, making it the perfect spot for locals and out-of-towners looking for an easy, delicious meal.

“We have summarized the project of Il Pastaio as an art and science and I think this is really true” said Nicola Farinetti, CEO of Eataly USA. “We wanted to express how fresh pasta, and in general Italian cuisine, was born in Italian homes with Italian grandmothers, later becoming traditions that were passed down, and then evolving to the present day thanks to the great cooks who developed it as an exact science. We also wanted to show the hard work of perfecting every housemade pasta shape. As we always say: the simple things are the most difficult. If it is true that pasta is simple, don’t think that it is easy or trivial. The pastaio cannot improvise – just ask any grandmother.”

Within the venue, Luca and other featured pasta makers will prepare the fresh pasta at Il Tavolo, a table visible just behind the bar. Diners will be able to watch, learn, and interact with the featured pasta maker while waiting for their meals. Additionally, Il Pastaio di Eataly will host monthly Il Tavolo Takeovers featuring specialty menu items and guest pastai such as Don Pasta on August 22 and L’Angolo Dolce e Salato September 3-9.
