Foodies have embraced the Meatless Monday trend since guests are craving more veggies on their plates. And so many restaurants have joined the movement. Meatless Monday is meant to reduce meat consumption by 15 percent to improve personal health and the health of our planet. The slogan: “One day a week cut out the meat!” Whether you consider yourself an herbivore or not, Vegas restaurants have taken note and broadened their omnivore options. Here’s a look at the top five places to dine on vegetarian cuisine in Las Vegas. Omnivores may even appreciate some of these delicious dishes.

1 Wynn Las Vegas and Encore Las Vegas

Steve Wynn adopted a vegan diet and asked all the restaurants at Wynn Las Vegas and Encore Las Vegas to come up with options for their menus. Stop in any restaurant there and you can find dishes that have a healthy bend.

2 MGM Grand

The restaurants at the MGM Grand have taken a shine to vegetarians by offering up healthy dishes. At Joël Robuchon, try one of the chef’s French vegetarian specialties such as Les Févettes, savory scented fava bean veloute with sweet onion foam, or for the truly epicurious, a 16-course tasting menu with no meat to be found. Shibuya offers a five-course vegetarian tasting menu, which includes a warm Japanese mushroom salad, fried organic tofu and a chef’s selection of vegetarian sushi rolls. L’Atelier de Joël Robuchon offers a nine-course vegetarian tasting menu with white onion tart with asparagus, truffle spaghetti and eggplant caviar.

3 Aria

Las Vegas’ newest casino, Aria at CityCenter, has its own set of delightful vegetarian dining. It starts at Jean Georges Steakhouse, where you can find heirloom tomato salad with hearts of palm, avocado and coconut vinaigrette or the miso-yuzu glazed tofu with maiitake mushrooms complemented by an explosion of flavor from vegetable red curry with jasmine rice. Bar Masa offers up a variety of vegetarian dishes, such as the mushroom yakisoba and miso tofu with avocado rolls. At Julian Serrano, try some of the tapas such as the stuffed piquillo peppers filled with creamy goat cheese and mushrooms duxelle or the hearty vegetarian paella with cauliflower, zucchini, peppers, sofrito, mushrooms and French beans and fresh mushroom stock. Sage offers Di Stefano Farms burrata cheese featuring marinated butter beans, baby artichokes, extra virgin olive oil and Banyuls vinegar. Or try the slow-poached organic farm egg garnished with smoked potatoes, shaved summer truffles and toasted country bread. Aria’s Blossom’s serves up choy sum pan-fried with garlic sauce and choy sum, a form of Chinese cabbage that is pan-fried char and is finished off with a drizzle of zesty garlic sauce.

4 Palazzo and Venetian

Tour the world through the eyes of a vegetarian at the restaurants of the Venetian and Palazzo. At Wolfgang Puck’s Cut, try the roasted baby beets served with Humboldt Fog goat cheese, pistachio, citrus, micro basil and mint; the crisp Olson Farm’s squash blossoms with Green Hill, marinated cherry tomatoes and basil pesto aioli; or the fava beans salad with Campania artichokes, pecorino romano, Meyer lemon and Marjoram. Puck’s Postrio Bar & Grill serves up wood-oven pizzas worthy of the finest vegetarians. Try the spaghettini pasta, vine-ripened tomatoes, basil and garlic or the porcini mushroom ravioli. Emeril Lagasse’s Table 10 offers summer sweet corn popovers and butternut squash risotto with a spicy Creole tomato gastrique. Mario Batale has been celebrating the Meatless Monday movement at all of his restaurants. Try the strachino ravioli served in a butter sauce with freshly shaved Matsutake mushrooms at B&B Ristorante.

5 Origin India

We wanted to give you one off-Strip option, and we looked no further than Origin India, which just celebrated Vegetarian Awareness month in October. Dishes such as vegetable samosas, chana massala with its garbanzo beans cooked with tomatoes and spices and bhindi massala, fresh-cut okra with diced onion and tomato flavored with cumin seeds have been hits. You can always dine on mixed vegetable curry; aloo gobi, a cooked mixture of potatoes, cauliflower and Indian spices; or the sag aloo with curried spinach and potatoes. Some dishes such as sag paneer or mutter paneer come with homemade Indian cheeses.
