Even though yesterday was National Martini Day, we prefer to keep the celebration going all week. There is nothing quite like kicking back with an old school perfectly chilled martini (shaken, not stirred, please), but why not try a fiery version or one that makes you feel like Jason Bourne? Here’s a look at five of the best martinis being served up in Boston right now.

You can almost picture Cambridge-native Matt Damon bellying up to the sleek Copley Square bar, sipping on a Jason Bourne (stirred, not shaken) inside the Fairmont Copley Plaza's Oak Long Bar + Kitchen. The complex cocktail made at this Back Bay haute spot comes complete with Bulleit Rye and Bacardi 8 and is made even better with the addition of King's Ridge Pinot Noir and cherry juice. The martinis fit for a spy are served "extra large and ice cold," which, for $22 a pop, they should be.

2 Avery Bar

There is an entire collection of specialty martinis to choose from at this chic lobby bar tucked inside the Ritz-Carlton, Boston - 10 to be exact, each with a unique take on the classic cocktail. Whether you like it dry, dirty, spicy, smokey or sour, the mixologists at Avery Bar have got you covered. Try the Martinez version made with Plymouth Gin, Sweet Vermouth, Maraschino Liqueur and Angostura Bitters or our favorite, the kicked up Fire martini complete with Botanist Gin , Dry Vermouth and cherry peppers.

When you are looking for a specialty martini after work, everyone knows where to go. City Bar inside the Lenox Hotel is the Back Bay haute spot best known for its cool martinis. Chill out with chilled glass filled with cucumber organic vodka, blackberries, lemon juice and a champagne float or sweeten it up with the pear version made with Absolut pears vodka, Mathilde Poire liqueur, pear purée and lemon juice. The Kentucky Flu Maker’s Mark bourbon with Licor 43 and citrus juices is the perfect way to relax and unwind.

4 The Capital Grille

It's no wonder the Stoli Doli has been a favorite of so many here since 1990. The signature martini here is made with Stolichnaya Vodka infused with fresh pineapple, chilled and served straight up. Simple, sweet and stunning, it doesn't get much better than this classic served from the clear glass jar that sits behind the bar filled with pineapple rings soaking up Stoli Vodka. The pineapple infused libation was created in New England (at the Providence location to be specific) nearly 30 years ago and has since become the restaurant's signature cocktail.

You won't find a tonier spot to sip on a refreshing martini than at the Beacon Hill haute spot of 75 Chestnut. If you aren't looking for it, you might miss this cozy restaurant hidden among the neighborhood brownstones, but we come here to sip on the Cucumelon Martini, a haute summer sizzler made with cucumber vodka, watermelon puree and mint. We also love the Pommie Martini, a simple yet delicious combination of New Amsterdam citron vodka and pomegranate juice.
