Looking for Japanese whisky? SushiSamba at the Grand Canal Shoppes now claims to have the largest collection in Las Vegas to go along with the Peruvian, Brazilian and Japanese cuisines.

The Japanese model their versions after scotch, double distilling malted and/or peated barley before it’s aged in wood barrels. The three Founding Fathers of Japanese Whisky — Shinjiro Torii of Suntory, Masataka Taketsuru of Nikka and Kiichiro Iwai of Mars — helped shape the Japanese versions.

SushiSamba curated its list based on the three Founding Fathers, bringing 26 whiskies without age statements all the way up to whiskies aged 28 years, in all varieties: single malt, pure malt, blended whisky, blended malt whisky, sherry cask whisky, whiskies that have been distilled in the Japanese Alps, and whiskies that have been distilled in the most northern island of Hokkaido, where the distillery is nestled between mountains and the Sea of Japan.

The impressive collection also includes some rare award-winning selections such as Akashi 5YR Sherry Cask, the Mars 3 & 25, Nikka Taketsuru 17-year pure malt, a line dedicated to the founder of Nikka.

Now through April, SushiSamba offers up a menu that showcases the versatility of the whiskies. Crispy tempura minter sweet oysters with butter lettuce and whisky-soy marinated robata pork ribs are just some of the dishes on the menu.

Whisky connoisseurs will have a chance to pre-order the entire menu with 48 hours notice on ongoing basis. Through April 10, SushiSamba features a different dish and pairing.

SushiSamba also has the Wagyu cocktail, a classic riff on an Old Fashioned that uses Japanese whisky treated to a wash of the highest grade wagyu before being stirred with maple and salted caramel.
