Keep an eye out for their seasonal ramen, which may include a bowl filled with buttercup squash sauce, bacon and clam XO, candied squash and nori.

In Porter Square, the five piece pork Buta Ramen bowl is the culprit for the long waits. The enormous soft noodle bowls are filled with flavorful pork broth and crunchy cabbage and bean sprouts. The choice of ramen bowls comes in two forms - two pieces of pork or five - at this cash-only haute spot. The Cambridge shop is known around town for its generous portions where it's an impressive feat if you actually are able to finish the entire bowl.

From the team behind one of Boston's best restaurants, o ya, comes a more casual version in the Feneway area known as Hojoko. You know it's going to be good when you dig into a hearty bowl of "funky" chicken ramen made with a delicious 48-hour chicken broth and filled with soy egg, menma and robata grilled koji chicken. If you are looking to kick it up a notch, just ask for a side of fermented chile relish to really warm you up.

One of Boston's biggest assortments of ramen can be found right on Newbury Street. This Back Bay haute spot has seven options for a hot bowl that come in versions with miso or soy sauce based broths. We love the not-so-traditional Itadaki Shoyu Ramen chock full of everything from sliced roast pork, a hard boiled egg and spinach to a fish cake, dried seaweed and bamboo shoots. Ramen bowls here can be enhanced even further with tasty add-ons like extra noodles, fresh corn or an additional egg.

Tucked inside the haute digs at The Eliot Hotel, the late-night menu here offers two hearty options to fill your belly before you go to bed - Roasted Chicken Ramen with schmaltz, seaweed tare and roasted hen; along with Slow Roasted Pork Ramen with miso soy broth. Add in some black truffles and you have a dish you won't soon forget.
