Renowned steakhouse, STK Las Vegas, recently celebrated its fifth anniversary at The Cosmopolitan and a big reason for the continued success is the restaurant’s executive chef, Stephen Hopcraft. In 2010, he joined The ONE Group family to help open the STK Las Vegas and has since appeared on Bravo’s Top Chef series as well as the Food Network’s Chefs vs City, dazzling audiences with his culinary creations. We recently spoke with Hopcraft for the latest Chef Talk installment, where he shared his secrets on what makes STK Las Vegas the “sexiest steakhouse on The Strip” and what you can expect when you come in for a meal.
What excites you about cooking in Las Vegas?
The competition, the crowd and the ingredients available to us.
What is it about cooking for a Las Vegas audience that is different than other major foodie markets?
Guests to Las Vegas are looking to let loose and experiment more than they would in a different city. They say what happens in Vegas, stays in Vegas, so people are more apt to try something different and push their limits when it comes to the cuisine they try.
What goes into curating your menu?
To develop new dishes, I collaborate a lot with my culinary team and we go through a trial and error process to fine-tune every dish. We make sure any new dishes are both filling a void on the menu, but staying cohesive with the rest of our offerings.
Do you feel a menu can have more “risks” in Las Vegas as opposed to other markets?
At STK, we aren’t trying to create something that has never been done before, but we always strive to execute clean, simple flavors in a clever way to create something new and memorable.
How often do you add/subtract menu items?
Our menu at STK rotates every three months or so with the seasons, as we create dishes that center around using seasonal ingredients whenever possible.
Where do you source your ingredients from?
We only source the best quality ingredients, so we have many different purveyors from all over the country and the globe.
Do you do seasonal specials?
We love to feature short-term seasonal ingredients and offer a new fish special daily.
What are your favorite items on the menu?
Right now I love the mushroom pot pie, scallops appetizer and the sweet corn pudding, but by far, my favorite dish is one of our delicious steaks.
What dishes are a “must” if it’s your first time here?
If it’s your first time at STK, you have to try the beef carpaccio, our Wagyu beef Lil’ BRGs, a tender 16 oz. NY steak, as well as the mushroom pot pie and the sweet corn pudding.
