When you ask a Las Vegas local where they go for a power lunch or decadent brunch, the answer is almost always Bryce Krausman and chef Dalton Wilson’s beloved restaurant, DW Bistro. The flavorful fusion of Jamaican and New Mexican cuisine culled from chef Dalton’s upbringing is truly unique to Sin City and makes for an unforgettable gourmet meal.
This culinary haute spot has wowed Vegas locals since it opened in the spring of 2010, boasting a wide-array of fresh dishes that utilize handpicked ingredients. The décor of the restaurant makes you feel right at home and the restaurant’s beautiful patio is always in high demand during lunchtime and on the weekends for its standout brunch service.
For starters, we encourage you to sip on one of the signature cocktails like The Jamaican Mule or DW Seasonal Farmer’s Market Fruit Infused Cocktail. The restaurant also has a very impressive beer menu, which offers some excellent craft beer selections. The libations are perfect to enjoy while sharing a couple of appetizers. The pesto torte is delicious with its combination of cream and goat cheese with roasted nuts, along with an assortment of flatbread crackers to dip. Another standout is the jerk friend calamari, which comes with a sweet Chile glaze, fresh basil and sweet hot peppers. For dishes on the lighter side, the DW signature salad is loaded with baby field greens, caramelized pecans, orange segments, seasonal bell peppers and topped with goat cheese for a great warm weather dish. The jerk seared ahi tuna salad is another excellent selection as it comes with ripe mango, seasonal marmalade, macadamia nuts and tangy citrus vinaigrette.
When it comes time to decide on which delicious entrée to try, DW Bistro has some diverse options to satisfy just about any culinary craving you may have. The DW Bowls are incredibly flavorful, especially the Jamaican curry chicken and the vegetable curry. Both come loaded with fresh seasonal vegetables and are served over rice or couscous. These dishes are hearty and won’t leave you feeling hungry by the time you’re done, in fact you’ll probably end up taking some of the portions home, as they are so generous. A standout from chef Dalton is the pan-seared salmon, which is served with a sweet guava beurre blanc and served over DW Bistro’s signature house rice. The DW jerk chicken and fried chicken are perfect for when you’re craving some gourmet comfort food and the homemade cornbread that comes with the fried chicken would make any Southerner proud. No matter which tasty entrée you ultimately decide to opt for, just be sure to save some room for dessert, as DW Bistro’s carrot cake is a must-try.
The next time you find yourself searching for the hottest new restaurant on The Strip, treat yourself to one of the best local spots Sin City has to offer instead. The world-class menu from chef Dalton at DW Bistro has something for everyone and his home-cooked cuisine will have you coming back for more.
