Haute Secrets Boston: Peter Davis of Henrietta’s Table

When you are the executive chef of a prominent Harvard Square restaurant, it’s important to cultivate lasting relationships with local suppliers of fresh produce, fish and game. Peter Davis has been doing just that since opening Henrietta’s Table at The Charles Hotel in 1995. Davis’ cooking has gained him national attention over the years for one of the best brunches in the city.

Before coming to Cambridge, Chef Davis worked in kitchens around the world, including the Hyatt Singapore, the Bali Hyatt, the Grand Hyatt in Hong Kong, and the Beverly Hills Peninsula where he was asked to create a restaurant within Cambridge’s Charles Hotel. Here, he uses local produce, fish and game to create standout dishes like the house smoked pastrami salmon, barbecue ale braised Elysian Field Farm’s pulled lamb shank and a classic New England favorite – Yankee pot roast.
