When you check into a first-class hotel on the Las Vegas Strip, you’re going to want to grab a proper “welcome to Sin City” cocktail. The Cosmopolitan Las Vegas recently revamped their CliQue Bar & Lounge, making this a go-to spot for expertly mixed cocktails and delicious bites courtesy of award-winning chef Brian Massie.
The newly designed space that is located right in the heart of the Cosmopolitan’s casino floor boasts a modern and chic atmosphere that makes this a great place for happy hour or canoodling with a date. There are plenty of tables, plus, plush couches and stools to relax in. One of the coolest aspects of spending an evening at the CliQue Bat & Lounge has to be the professional mixology that is done tableside. These special drinks are limited to one per person, but the impressive presentation and of course final tasting makes it worth it. The “barrel smoked” options include Racing Down the Boulevard, a cocktail paring premium Bulleit Bourbon with espresso-infused Campari and a dash of sweet vermouth. The Chester Copper Pot option is also a good one, which mixes Botran Reserva Rum instead of bourbon. Should you want something sweeter, the Bow Street Banana is CliQue’s version of the classic Smokey Monkey Cocktail, only this one has banana-infused Jameson whiskey, Pedro Ximenez Sherry, caramelized bananas and chocolate bitters. We’re also big fans of the Green Machine cocktail, which has fresh pressed cucumber, celery, spinach and lemon with premium 50 Bleu vodka. Th aptly titled, Fresh Pressed will also be a favorite with health nuts at it mixes up Avion Silver tequila with freshly squeezed beet and carrot juice, plus ginger and lemon for a truly invigorating cocktail.
There is also a nice assortment of top-shelf champagne cocktails, dubbed “Tiny Bubbles” on hand. The Ruby Rose mixes Grey Goose vodka, grapefruit-rose cordial, lemon and hibiscus sugar for a sweet libation. The Tropical Sunset is also a winner, with Stoli vanilla vodka, cranberry, lemon and then a splash of Red Bull yellow edition for a kick that will give you some extra energy to take on Sin City.
The “table snacks” from chef Brian Massie are great for pairing with CliQue’s cocktails. From honey sriracha popcorn with chives and fresh lemon-infused edamame, to CliQue’s signature wings and miso sea bass lettuce cups, these small plates are meat for sharing. We’re big fans of Bill’s spicy tuna that comes served on crispy rice, along with the fresh yellowtail sashimi and mini lobster tacos that are served with grilled mango and avocado. Should you crave something sweet with your drink, be sure to try the very decadent and gourmet version of deep-fried Oreo’s that are sure to put a satisfied smile across your face.
