Blade’s Master Sushi Chef Dishes On New Omakase Dinner

Blade sushi restaurant, located at the gorgeous iconic Fontainebleau Miami Beach, is now offering something new for sushi lovers: the Omakase dinner. This eight-course imaginative dinner provides new, unpredictable dishes alongside some of the savory staples Blade is known for, including their signature self-titled roll with marinated salmon, fresh mozzarella, spicy mayonnaise and fried garlic.

Sitting down with Blade’s Master Sushi Chef Deden “Benny” Bandi, we learned more about what’s expected with this new dinner concept and what other tasty elements diners can enjoy this upcoming season.

Can you tell us a little more about the new Omakase Dinner? What was the thought process behind it?

Omakase is an exclusive dining experience that is guided by the chef. I wanted to connect with our guest through my food and the story behind each course.

What makes the Omakase Dinner so unique?

The chef showcases his knowledge and technique by preparing each dish in front of the guests and offering the perfect sake paring.

What’s the most exciting aspect that you think will bring your diners in? 

The chef tells a story through an eight course meal by exploring different flavors and techniques.

What do you think is the best course offered in this dinner? Why are you so excited to have it on the menu? 

The fresh Smoke Salmon Carpaccio. I feel it’s the best course offered on the menu. The preparation for this dish is unique and interactive with our guests by combining cold smoking techniques that are sure to surprise.

What is your biggest influence when coming up with different menu items?

The “wow” factor, and seeing my guests faces after they have experienced my menu

What do you look forward to in the upcoming fall and winter seasons in terms of new foods and techniques?

I see small intimate spaces with “Omakase” being the showcase for the guest and their dining experience.
