2 Pyramid Bistro
For many years, the restaurant inside Explore Booksellers was the only vegetarian restaurant in Aspen. Today, it serves sustainably raised meat, but still focuses on organic, bio-dynamic and sustainable produce for the majority of its menu. Smoked paprika hummus, crispy summer pea gnocchi and ginger-marinated organic tofu are just some of the options available here.

Peach's sun-drenched patio is a lovely area in which to hang out, but it's the fresh, healthy and always-changing menu that keeps people coming back. It may just be a market, but it's the hub of the Aspen Airport Business Center. In fact, people drive to the ABC just to make a shopping trip through the health-conscious aisles of this store.
