Holiday Dining: The Snowman Vacherin Debuts at Central Michel Richard

The Snowman Vacherin is one of Michel Richard's signature dishes at Central.

Chef Michel Richard is known for his adorable vacherins. Now for the holidays, you can order one of his snowman vacherins at his dining spot, Central Michel Richard at Caesars Palace. The slowly baked French meringue dessert is filled with ice-cream and priced at $12. Through Jan. 31, $2 of every snowman will benefit the St. Jude’s Children’s Research Hospital. The vacherin will also be part of the new holiday menu available Christmas Eve and Christmas Day.

To top it off, if you post a photo of your snowman to www.Facebook.com/CentralLV and/or www.Twitter.com/CentralLV, you can get a round of complimentary Central holiday egg nog. The holiday egg nog is cinnamon-scented and served in a martini glass and makes the perfect ending to any meal this season. Once the photo is posted, just show your phone to your server for your egg nog.

Central Michel Richard is also serving a holiday menu from 11 a.m. to 11 p.m. on Christmas Eve and Christmas day. The four-course meal begins with a choice of chestnut peanut soup with duck confit; curry mussel soup or crab bisque. The next course offers leek salad with poached egg; yellowtail carpaccio with yuzu sauce or goat cheese Caesar salad. The main entree course selections include prime rib with horseradish jus; seared duck breast with beet cinnamon sauce; poached halibut with morel sauce and arugula salad; or lobster tail with bok choy and ginger butter sauce. Last but not least – dessert. Guests can select between the snowman vacherin or Bûche de Noël or butter tart. The price is $55 per person.
