A New Year Means a New Chef and GM at craft|Dallas

After all the champagne was toasted and the confetti thrown, the folks at Tom Colicchio’s craft|Dallas inside the W Hotel were all set to welcome two newcomers to their respectable ranks: Chef de Cuisine Tim Bevins and GM James Cobb.

Replacing Jeffrey Harris, who is leaving craft to pursue his own ventures starting January 16, Tim Bevins is coming in with plenty of craft-level expertise. He previously held culinary positions at craft|Dallas, Dragonfly at Hotel ZaZa, George Restaurant and The Mercury, most recently serving as Executive Sous Chef at craft|Atlanta. He is well versed in the craft concept to prepare locally sourced seasonal ingredients with simplicity and finesse, and we are looking forward to seeing what he cooks up.

James Cobb is a Dallas native who has held managerial positions at some of the most prestigious eateries in the area, including Terrelli’s Dallas/Frisco, Steel, Standard and most recently Dragonfly. He promises to bring to the table

“While it is certainly sad to bid farewell to the talented Jeff Harris, we wish him the very best in his new endeavor as he turns the kitchen over to Tim Bevins,” said Thomas Caramucci, General Manager of W Dallas-Victory. “Patrons are in for a treat when they personally experience Tim Bevins’ energy and passion for the craft style of cooking. We couldn’t ask for a better fit than James and Tim and are thrilled to welcome them both aboard.”

Stay tuned for more details on Harris’ new venture, and check out the website for upcoming events.
