Iron Chef Winning Menu at JG Domestic

It happens nearly every time I sit down to watch Iron Chef America on Food Network. I get all excited over the secret ingredient. I am wowed by the amazing ways the chefs transform it into their dishes. And then I piss and moan that I am not cool enough to be a judge (Although, seriously, enough with the food-clueless rappers. Call me!) and will never get to taste these culinary creations. Iron Chef and Philadelphia-based Jose Garces has taken pity on me and the thousands of other local fans, though, and is letting us get a taste of Kitchen Stadium as he offers one of his battle-winning menus at JG Domestic this month.

Battle Sparkling Wine was Garces’ latest win, and all through December guests can dine on the five courses that put him on top versus Chef Mike Lata of FIG (Food Is Good) in Charleston, SC. Check out the line-up:

3 Champagne Flutes
Champagne Flutes with Blini, various garnishes:
Prosecco: Marinated Artichoke, Parmesan Espuma
Hackleback: Caviar, Champagne Chive Cream
Cava: Cured Salmon, Baby Fennel, Fresh Goat Cheese

Champagne Poached Oyster
Champagne Sorrel Broth, Hot Potato-Champagne Espuma, Pickled Chanterelle, Guanciale

Seared Diver Scallop
Sparkling Wine Hollandaise, Sparkling Wine Soubise

Prosecco Braised Rabbit Leg
Roasted Rabbit Loin, Gnudi and Tomato-Prosecco Fondue

Cava Honey Cake
Manchego Mousse, Cava Gelée, Cava Honey, Cava Macerated Strawberries, Strawberry Bubbles

The menu is $65, with a sparkling wine pairing available for $25. If you haven’t had the opportunity to stop into Garces’ latest restaurant, why not do so with this festive and fizzy food fix? As the Chairmain says, “A la cuisine!” Or, in this case, to the restaurant!
