First-timers to raw bars need not be squeamish. Oysters and quahogs can actually be quite delicious, especially when you taste what the magic some Phoenix chefs can work on them. And that’s even separate from the many addictive cocktail sauces served alongside. Try these Top 5 raw bars and then see if you’ve had a change of taste buds.

1 elements

The kitchen and dining areas at Sanctuary Camelback Mountain Resort & Spa were renovated earlier this year to make way for two new venues, Praying Monk and XII, but elements received a number of shiny new updates, too, including an expanded menu with new vegetarian and gluten-free dishes as well as in-house smoked meats and a raw bar with iced shellfish and sashimi. Everything is good here, and the seafood as fresh as it can be in the middle of the Sonoran. Plus, nestled into the side of Camelback Mountain, Sanctuary may have the best view of any restaurant in town.

Ko'Sin is a unique restaurant located inside the Sheraton Wild Horse Pass Resort, serving custom quail egg omelets, Native American-inspired salads and an iced raw bar, including oysters, smoked salmon, smoked trout, Lion's Paw diver scallops and exotic fruits and cheeses.
