Las Vegas is known as a place that likes to reinvent itself on a regular basis. We blow up our history and bring in something new to spark the interest of tourists. The dining scene is no different. Since we last talked about new restaurants opening in Las Vegas, a few choice spots have opened. Last December, all the talk was about the new dining adventures at CityCenter. This coming December, the talk will be of the culinary destinations at Cosmopolitan of Las Vegas. Until then, feast at some of these new restaurants that just opened in Las Vegas.

1 KGB: Kerry’s Gourmet Burgers

Maybe it’s the thought of gourmet burgers from the rock and roll chef himself. Maybe it’s the 1960s-era Russian propaganda that bedecks the walls. But Kerry Simon’s new KGB: Kerry’s Gourmet Burgers gives Simon a chance to spread his culinary wings and show off his burger skills. Simon beat out Iron Chef Cat Cora on Food Network’s “Iron Chef America” to build the ultimate burger, which serves as his inspiration for this new spot at Harrah’s Las Vegas. The menu includes “Iron Chef” sliders and tater tots and sweet selections such as cotton candy and the Captain Crunch milkshakes. And, yes, you will find vodka here as well. It is Russian after all.

2 Munchbar

Every city needs a late-night dining option where you can grab some grub after a night on the town. Munchbar offers up that service, especially if you’re in the vicinity of Caesars Palace. Chef Bryan Ogden, son of Bradley Ogden, serves up casual gourmet cuisine. Try the Munch breakfast sandwich on an English muffin with a fried egg, grilled Canadian bacon and fries and sausage gravy or the Munch Burger, complete with sautéed onions, “fancy sauce” and a bucket of fries. Even more sophisticated palettes will appreciate the mini Maine lobster rolls on a toasted bun with herb mayo. You can even grab your grub to-go at a window in the front. 3 Republic Kitchen & Bar

Henderson was thrilled when this comfort food bistro opened on Eastern Avenue this summer. Republic Kitchen & Bar Chef Josh Green serves up the Steak’ Em and Cheese, the Republic Kobe Sloppy Joe with ground Kobe beef, Maui onions and ripe tomatoes or the Vermont Cheddar Grilled Cheese served on sourdough bread with a cup of the daily soup. Look for the Republic Meat Loaf “TV Dinner”  with garlic mashed potatoes, corn and a mini apple cobbler or the Republic Turkey “TV Dinner” with stuffing, corn and a mini cherry cobbler served in old-fashioned porcelain TV trays. And don’t miss out on the Jazz Brunch on weekends.

4 Bachi Burger

Foodies have been raving about the interesting twist on burgers at Bachi Burger. The Hibachi burgers are touched with Asian Influences from the Hawaiian islands. Look for dishes such as the Ronin, Kalbi and Spicy Miso burgers along with parmesan truffle fries making the one-page menu. You'll be back to try more.

5 Match Restaurant

Match Restaurant is just another way to say you want some fusion cuisine. This new outpost from Chen-yu Randy Liu and Gregory Arianoff and Andy Chang combines their culinary talents to produce a combination of cosmopolitan tapas and Korean barbecue. You’ll find tastes from Spain, Russia, Korea and Hawaii on the menu. We say try the Dragon Balls, crunchy nuggets bathed in a flour and egg batter with chopped tuna, onions and green pepper inside and an eel sauce giving it the sweetness it needs. Tonight, you can try the stuffed olives with boquerones and roasted bell pepper, Korean sliders with Kimchi, a tortilla Espanola with house made aioli, sashimi salmon with avocado and cucumber, smoked  paprika chicken skewers with sauce Andalouse and fried cream cheese wontons straight off the specials.
