St. Regis Gets Signature: Kauai Grill

This fine dining establishment combines a select assortment of Jean-George’s best recipes from his portfolio of domestic and international restaurants across the globe. And he only uses premier cuts of meats and the freshest local fish available. Entrée centerpieces are simple, yet accompaniments are avant-garde. Jean-Georges relies on locally born and bred chef de cuisine, Colin Hazama to execute his vision and find fresh, island ingredients for his innovative dishes.

On a recent trip, we were blown away while indulging in a seven-course tasting menu paired with tantalizing sips of wine. Crispy poached eggs with caviar and vodka crème fraiche, grilled black pepper octopus and Kula onions spiked with lime and pan-roasted onaga surrounded by green pea ravioli were just a few of our savory highlights. And, although I’m typically a dark chocolate fiend, the white chocolate and yuzu palova with Thai basil was like a light flakey crepe and rather ideal end to our decadent dining experience.

After our delectable visit to Kauai Grill, I can’t wait for a follow up trip. And, of course the elegant Garden Isle eatery has already been added to my list of Jean-George fellow faves Mercer Kitchen, Spice Market and Perry Street.
