Take your pick, from the Green Bay Tuna Roll (asparagus, cucumber and kampyo rolled uramaki style with a tuna and avocado wrap) to the LIR Roll (spicy tuna and avocado on the inside, fresh salmon on the outside drizzled with a sweet and spicy sauce), it's all good. Looking for a little more rock and little less roll? Go for the Tuna Razor: thinly sliced tuna with serrano chilies, cilantro and sriracha sauce.

Uptown's East Wind was voted by Zagat as one of the best Japanese restaurants in Dallas, and their sushi menu proves it. Although there are quite a few rolls that boast high-grade tuna, like the East Wind Roll (with Escolar White Tuna and bell peppers topped with caviar), my favorite is the Crunchy Spicy Tuna Roll, filled with tempura crumbles and rolled in Wasabi Topico. Or, go for simplicity with the Pressed Tuna Roll, with spicy tuna and tuna slices squeezed between layers of sushi rice.
