Flour + Water pizza-maker Jon Darsky has decided to branch out to pursue his own project. His reason is because it’s hard to pursue his own project “while working full-time in such a busy kitchen,” he said. “Not to say the experience wasn’t great, but working all those hours wasn’t going to get me closer to building my dream.” Apparently, this new project is a wood-fired pizza joint that will serve Neopolitan-style pizzas made with American ingredients. He would also like to create a daytime sandwich shop, created with fresh-baked bread. Chef and partner Thomas McNaughton is now running Flour + Water.
