To Feast Like a Knight

While dining on your own holiday feasts this season, did you happen to wonder what culinary delights Haute Living cover subject Sir Richard Branson was treated to? Earlier in the month he visited Natirar, the 90-acre estate in Somerset County, New Jersey, that he co-owns with Bob Wojtowicz. While there, he sampled some of the tastings from the on-site culinary center. According to Food & Wine Magazine, Chef David Felton served up the British knight some “lovely fish” along with carrot-ginger vinaigrette on the greenhouse lettuce salad, a dish he reportedly had such an affinity for that he requested the recipe. Chef Felton’s restaurant at the bucolic estate, Ninety Acres, will take a cue from one of our favorite West Coast chefs, Ron Siegel at the Ritz-Carlton, San Francisco, where the “table-to-farm” philosophy is to provide more than 80 percent of Ninety Acres’ food from locally grown sources. There is also talk of starting farmers market on the property.
